I could eat sweet potatoes every week. They are so easy to make and are so versatile as they are great to eat plain as I am running out the door or to put into a large salad or bowl.
I encourage you to make a pan of roasted sweet potatoes as you are prepping for your busy week ahead. Then, when you are feeling hungry and need to get out the door fast, just grab one and run. No need to heat or season, they are good plain and oh so nutritious.
Roasted Sweet potato halves.
Just wash and cut your sweet potato in half the long way, place face down on parchment paper and place in the oven for ~45 min to 1 hour at 375 degrees. (Time depends on the size of your potatoes and how done you prefer them.) I love to cook mine until they are very soft to touch and the skin starts to separate a little, you may even see the sugar seeping out of the potato. Roasting sweet potatoes really brings out the sweetness and they are a very easy and nutritious thing to grab on the go!
