Good News!  You can eat pasta on a whole food plant-based diet!  BUT you need to choose the right kind.  No more noodles made from refined flours.  Look at the ingredients to find pastas made directly from things like brown rice, corn, lentils, cauliflower, quinoa, whole wheat, or chickpeas to name a few.  There are a TON of different noodle varieties that are compliant. Here are a few of mine and my kids favorites…  


Tip: Make sure you use a larger pan with a lot of water in it because the water will get thick and it’s easy for it to spill over.  Also, whole food plant-based noodles will get hard in the fridge as left overs.  Don’t fret!  They will come back to life if you reheat them with some added water.
